Our ginger is grown in Mkuranga District, in Tanzania's Coastal Region, on the same clean, untainted soils that support our Mitaranda Organic Project (2016) and Kisele Organic Project (2018). Ginger rewards patience: it needs a full growing season in the ground before the rhizome develops the depth of flavour and heat that export buyers expect, and coastal Mkuranga's soil and rainfall pattern give it that time without stress.
This isn't a crop we've added as an afterthought. It sits alongside our herbs and spices programme and draws on the same farmer network and organic infrastructure we've built up since 2014.
Organic Cultivation and Mature-Stage Harvest
Ginger for export is grown without synthetic fertilisers or chemical pesticides, relying instead on composting, green manure and crop rotation to keep the soil in condition, and on bio-pesticides for pest control. This matters more for ginger than for many crops, since aroma and pungency are closely tied to how the plant is grown, not just its variety.
We let the rhizome mature fully before harvest rather than lifting it early, since immature ginger is milder, more watery, and doesn't hold up as well in transit — whether that transit is a two-day air shipment or a long dry cure. Our contracted farmers, more than 50 of them and roughly 70% rural women trained in organic methods, hand-harvest each plot once it reaches that mature stage.
Fresh Ginger: Grading and Cold-Chain Export
For fresh export, rhizomes are hand-harvested, then sorted and graded within hours on skin condition, firmness and size, with anything short of export standard set aside. Graded ginger is pre-cooled at the packhouse to slow moisture loss before it's packed into food-grade export cartons.
From there it moves by air through Julius Nyerere International Airport in Dar es Salaam, the right choice for destinations where freshness and full aroma matter most. Ginger harvested at sunrise and air-freighted can reach Gulf or Seychelles kitchens within 24 to 48 hours, arriving with the pungency intact.

Dried Ginger: A Longer Shelf Life for Longer Routes
For buyers further from Tanzania, or those who need a longer shelf life for their own processing or storage, we also supply dried ginger. Mature rhizomes are cleaned, cut and dried, concentrating the aroma and pungency into a product built to travel further and hold in storage far longer than fresh rhizome.
Dried ginger is packed in food-grade export cartons and can move by sea freight, which suits the longer, less time-sensitive routes it's typically ordered for, or by air where speed is still the priority. Fresh rhizomes are checked for firmness, skin condition and size uniformity; dried ginger is checked for consistent cut, colour and dryness. Only produce that clears this inspection is packed for export, with the rest diverted to local sale.
