Garlic Grown in Tanzania's Coastal Soils

Our garlic is grown in Mkuranga District, part of Tanzania's Coastal Region, on the same clean, untainted soils behind our Mitaranda Organic Project (2016) and Kisele Organic Project (2018). Garlic is a demanding crop to grow well, and the consistency of our soil and water conditions here supports firm bulbs with genuine aroma rather than watery, underdeveloped ones.

This crop sits within our wider herbs and spices programme, drawing on the same organic infrastructure and farmer network we've built since 2014.

Organic Cultivation and Careful Harvest

Garlic is grown without synthetic fertilisers or chemical pesticides, using composting, green manure and crop rotation to build soil fertility, and bio-pesticides for pest management. More than 50 contracted farmers grow for our garlic programme, around 70% of them rural women trained in organic cultivation and supplied with certified seed stock.

Bulbs are hand-harvested once mature, timed so the outer skin has begun to dry naturally in the field — the starting point for a proper cure.

Curing: The Step That Makes the Difference

After harvest, garlic is cured before it's graded or packed. Curing dries the outer skin and neck fully, which concentrates flavour, seals in aroma, and is what allows the bulb to store and travel well rather than spoiling early.

Skipping or rushing this step is a common shortcut in the trade, and it shows up later as soft bulbs or sprouting in transit. We treat curing as a required stage, not an optional one, before any garlic moves toward export grading.

Grading and Quality Standards

Once cured, bulbs are sorted and graded by size, firmness and skin condition, and inspected for any signs of damage or premature sprouting. Only bulbs that meet export standard are packed; the remainder is set aside for local sale.
